I love working with food!

Today was the last day of the Stair challenge, how many stairs you can do in one workout session (up and down included) I did 2302 stairs. It was great fun and only took around a half hour. My sis and Anthony hadn't had a date since the baby was born so Covina and I got to watch the baby which they went to the movies. Before they left Anthony told his precious wife the sweetest thing... he asked her what she was wearing to the movies cause if she was wearing sweats he was going to to. He told her to just be comfortable. That is true love there! He cares more about her than anything! I can't wait til my man comes around and treats me that way. While they were gone I made chicken noodle soup (homemade) and surprised her by making her favorite homemade rolls. She was pretty excited to come home to that, and it was the best and most she has eaten in days. The Lord wants us to use our gifts to bless others. He also wants us to constantly remember and be grateful for what we CAN do. I have been in the phase at times where I feel obsolete and unimportant, it is times like that we should all remember what we can do and to do it, cause it will bless the lives of others. We are going to watch A Walk to Remember tonight (with the clear play, to block out the language) I can't wait! I watched it a few weeks ago and it really inspired me. I love Mandy Moore's character in it and the sweet message of the story, it is one of those movies that makes me want to live my life to the fullest and to be a better person. The love story in it is so sweet too, get's me excited for when that opportunity comes my way.




Roll Recipe
In the microwave scald two cups of milk. Let cool ( I let it cool for about twenty minutes). while the milk is cooling I get the yeast mixture together; I also oil a very large bowl for the bread to rise in. I spray it with Pam or use a little oil and spread it around with a paper towel. I also get a floured surface ready for kneading.
Yeast mixture (Dissolve in large mixing bowl... after I add the three ingredients together I stir them around with my finger or a fork and then let it sit and rise):
2 Tbl. Yeast                    2 cups Warm Water                       1/2 Cup sugar
Let Yeast grow about 10 minutes, then add:
scalded milk               1/2 cup oil             3 tsp salt             6-10 cups flour        
Use the least amount of flour possible. You want the dough to be sticky but knead-able and elastic. Once you have added the right amount of flour and mixed it all together plop the dough onto the prepared floured surface. Knead the dough for at least 5 minutes, adding small sprinkles of flour as needed. Place dough in oiled bowl and cover with sprayed lid or Glad Saran Wrap (plastic wrap) that has been sprayed as well. (I like to throw the dough in the bowl, then flip it before I cover it so that the top of the dough has some oil on it and doesn't stick to the lid or covering. Place bowl in sink filled half way with warm or hot water (this helps the dough grow faster).Let rise til dough is doubles in size (Takes about an hour)
Rolls- Once dough is ready, preheat the oven to 350 degrees F. Shape dough into balls or whatever shapes you want (Fan Tans, clovers, croissants or balls). Place on a cookie sheet for regular rolls and let rise for 20 minutes. Bake for 16-30 minutes. Top with butter when done (keeps them soft and tastes good).

Cinnamon Rolls- Roll Dough into a rectangle on a lightly floured or oiled surface. Spread over dough with softened margarine or butter. Then add a thick layer or brown sugar, then cover the brown sugar with a layer of cinnamon. ( I love Saigon cinnamon) Roll dough up cut about 1 1/2 in rolls ( You can use a knife, a pizzacutter or thread)

Place on a cookie sheet or a 13 x 9 inch glass baking dish, about 1/4 inch. apart. Press tops of rolls down. Let rise 20 minutes. Bake in a preheated 350 degree oven for 16-30 minutes. Top with icing or Frosting.
Frosting Recipe
In a mixing bowl mix the following together:
2 cubes butter or margarine softened or 1 cube butter/margarine and 1/2 cup shortening (depending on what you have at home) All in all you want 1 cup of Fat
Add 2 Tb. milk         3-4 cups powdered sugar
1-1/2 tsp. vanilla extract    a dash of salt
Mix till fluffy!!!!! Enjoy!!!!!!

This is what my family did without me the other night... A Bonfire in the backyard! I'm glad they are having fun though!
